Time for Pineapple and Blueberry Zucchini Bread! Can you think of a better way to start the day? Here’s the recipe! 🍍🍍🍍 3 eggs 1 1/2 cup packed brown sugar 1 cup vegetable oil 1 tsp vanilla 1 1/2 cup grated zucchini (3 medium zucchini) 2 cups fresh blueberries 1 cup pineapple jam 1 1/2 cup self-rising flour 1 1/2 cup plain flour Preheat oven to 350 degrees Grease and line a large loaf pan. In a large bowl stir together the eggs, sugar, oil and vanilla until well combined. Stir in the zucchini, blueberries, and jam. Add the flour into batches, stirring until just combined. Bake in prepared pan for 60-75 minutes until top springs back when touched and a toothpick inserted into the center comes out clean.
